Now, ramen was born in Japan has taken the world by storm, France, the United Kingdom, the United States, Australia, etc., ramen around the world has become a boom. Last year, survey on non-Japanese "The best Japanese food of what you have eaten" results Ramen is the first place (32%), 10% lead to the 2 place, the sashimi (22%). We can say that Ramen is a food receiving good acceptance in the world, today. "Regional ramen" which reflects their climate and food culture is emerging in various countries. Shin-Yokohama Raumen museum has started importing those regional ramen as attempt of reverse flow since April, 2013. Ramen from U.S.A and Germany opened here until today. The 3rd imported ramen is from Milano, Italy where pasta culture occupies like Soba's one in Japan. Italian ramen debut from the kingdom of PASTA.

Shin-Yokohama Raumen museum has started a program surveying 26 cities in 17 countries to find Ramen which was born in outside-Japan, has no brunch in Japan and gains local fans, then transferring and introducing those ramen here since 2013.

Italian's common sense is "Mother's taste is the world best" and unwelcomes other countries' food. In fact, there is no French restaurant in Milan even it is neighbor country's one. Although atmosphere with such food culture sticking pasta, "CASA RAMEN" has attracted local popularity.

A chief chef Luca Catalfamo (38) was born in Milan, Italy. He was greatly impressed by ramen at "IPPUDO" in New York while he was pursuing learning of cuisine in some countries. He learned about Dashi (stock) at Udon restaurant in London and has decided to start his own ramen restaurant afterwards. He stayed in Japan for a month and ate more than 3 bowls of ramen per day. Then, has started "CASA RAMEN" in Milan on September, 2013 after knowing what ramen he wanted to serve. Today, his fans make line in front of his restaurant a half hour before opening even he has not advertised at all. The good taste reputation has gone through from mouth to mouth.
He teaches how to cook ramen in cookery school several times a year from some time ago. Some have to stand to see in a class. Milanese's attention to Ramen has been rising.

There is various styles of Tonkotsu ramen even we call it just Tonkotsu ramen. He created Tonkotsu ramen based on Japanese authentic one, however, his one reflects techniques of Italian cuisine, it is the so-called "Milan Tonkotsu ramen".
